Cinco de mayo fiesta


I served this to my family this past cinco de mayo. It was quite delicious. The filling and sauce are both very rich, but I found were evened out with the fresh salsa and lettuce wrap.

Taco Filling


Ingredients:
1 c walnuts
1/4 c sunflower seeds
salt and pepper to taste
1 Tbs nutritional yeast
1/4 tsp cayenne
1 Tbs lemon juice
1 tsp cumin
1 clove of garlic
1/2 tsp oregano
1/4 medium red onion

Blend all ingredients in food processor until smooth, (similar texture to that of refried beans).

Jalapeno Nacho Cheese Sauce

Ingredients:
1/2 c cashews
1/4 c sunflower seeds
1/8 c nutritional yeast
1 green chili
1/4 tsp cayenne (more if you like it real spicy)
1/2 tsp cumin
1 tsp chili powder
salt and pepper to taste
water (add as much as is needed to make it saucy)

Blend all ingredients in food processor until smooth and creamy, adding water as needed.

Salsa Fresca

Ingredients:
1-2 tomatoes (juiced)
1/2 red onion
2 green onions
1 clove of garlic
2 handfuls of cilantro
1/4 c fresh or frozen corn

Either chop all ingredients with a knife, and then mix them all in a bowl, or throw them all into a food processor until they are roughly chopped.

Marinated Veggies:

Ingredients:
1 red, yellow, orange or green bell pepper
1/2 medium red onion
1 zucchini
2 portabella mushrooms
1/4 c apple cider vinegar
3 tsp extra virgin olive oil
1 tsp oregano
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder

Chop all veggies and marinate them in with the vinegar, olive oil and spices for at least 15 minutes. Once marinated, you can either place in the dehydrator for an hour or two, or serve them cold. I suggest marinating them longer if you do not plan on placing them in the dehydrator.

Guacamole

Ingredients:
2 avocados
1/2 tomato
1/4 red onion
1 clove of garlic
salt to taste

Taco shells/burrito tortillas

Large Romain leaves or large chard leaves.

Toppings:

Cilantro
Red onion
Avocado
lime (fresh juice is good on top, as well as some shredded peel)


To serve the meal:

Wrap the bean mixture, nacho sauce, guacamole and salsa fresco in the greens wrap. Top with which ever toppings sound good to you!
